Cask Conditioned “Real” Ale means naturally carbonated beer, using secondary fermentation in the cask from which it is served: no artificial CO2 added. All regular Granite cask ales are dry-hopped, meaning hops are added directly into the cask for added aroma. All cask beer is served via a hand pump/beer engine.

FVX, as in Fermentation Vessel X, is our first, and only, closed-fermenter. Our regular lineup all thrive open-fermented, meaning the fermentation vessel is fully open to the air—our signature Ringwood yeast strongly prefers this. FVX allows us to offer styles where open fermentation does not work, and also allows our brewers to experiment with new, non-Ringwood yeast.
